This is my easy turkey chili recipe. I use mostly organic ingredients but you can use what you have and improvise some.
First, chop 1/4 sweet yellow onion and saute it with 2 Tbls of butter and a 1/2 tsp of oregano.
Then throw in a pound of ground turkey to brown. Drain most of the turkey fat, otherwise it tastes too much like turkey. Add 2 Tbls more of butter after you have drained it. It helps cut some of the tomato tartness to come.
Add 2 cans of tri-beans (pintos, kidney, black bean) and 1 can of pintos - rinsed.
Add 1 can of Rotel original and 1 can of corn. I drain the liquid off of both first. Saute a few minutes. Add 4 Tbls of chili powder. Saute a few more minutes.
Add 1 can of tomato soup and 2 to 3 cans of water.
Cook on low for an hour, stirring occasionally.
